Delicious Day Three: Fajitas

Today felt like the type of day that would have been perfect for grabbing one of our favorite meals from Wahoo's or Fresh Corn Grill for dinner. But alas, it was day three of our eating-in challenge, and we had plans for fajitas!

I was at work until 6:45 tonight, and then I had to face the rough commute home. Thankfully, Terry had dinner under control, and I provided directions over the phone.

Chicken Fajitas
  • 2 tsp. chili powder
  • 1 tsp. salt
  • 1 tsp. paprika
  • 1/4 tsp. garlic powder
  • 1/4 tsp. Cayenne pepper
  • 1/2 tsp. cumin
  • 1 lb. free-range organic chicken (we used cutlets)
  • 2 yellow onions, sliced
  • 1 tbsp. butter
  • 1 bell pepper, any color, sliced
  • whole-wheat tortillas - we made our own last night
Combine the spices in a small bowl and rub on the chicken. Allow the spice-rubbed chicken to sit in the fridge for an hour or two. (During this time, you could make your own tortillas or do your workout!)

We caramelized the onions to add some depth of flavor. To caramelize, simply add the sliced onions and the butter to a pan and heat on low for about 30 minutes, stirring occasionally. Prepare the toppings - we used cheese, fresh tomatoes, avocados, and spinach. Meanwhile, add the chicken to a grill pan (we have a non-stick, but if you need cooking spray you can try a Misto to spray olive oil) over medium heat and cook for about 6 minutes on each side, depending on the thickness of your chicken. While the chicken is cooking, add the sliced bell peppers to the onions and increase the heat to medium for 8-10 minutes. Be sure the peppers stay crunchy to get that perfect texture!



Our fajitas were awesome! And we felt full, too, even though I only ate one and Terry only ate two. This meal is a fantastic way to get your vegetable intake for the day. Mix it up; you could also consider adding squash, mushrooms, different types of lettuce, a variety of peppers...the list goes on! We also added pinto beans, but we could have gone with a salad or some other vegetable. Hope you enjoy these delightful fajitas! I feel lucky to have such a helpful husband who doesn't mind cooking! (And yes, tonight was my turn to do the dishes...not the most fun part of cooking!)
