White Sausage Pizza

Happy Tuesday! I don't know about where you are, but the weather has been gorgeous in LA this week, and I'm thrilled. Since I actually got home at my "normal" (though not lately) time, I was able to enjoy having our back door open while I worked around the house. And Scout enjoyed checking out the birds on our patio.

This morning, before the sun really started shining, I got to try a new overnight oats recipe. My coworker is also a big fan of making oats the night before, but she usually just combines equal parts milk and oats plus a splash of vanilla.

The flavor was definitely simpler than my usual, and the oats were less creamy. The oats didn't completely absorb the milk, so it was more liquidy than I prefer. I added a scoop of peanut butter and some honey to spice things up a bit and sliced a banana in for fruit. Pretty good! And they definitely held me over until lunch.

Getting home early meant I had time to putter around the house before my workout. It turned out to be bad news; by the time I ran out to the grocery store, I wasn't in the mood for a run. I considered doing yoga instead, but Terry was on board for a run, so I jumped at the chance to spend some time with him. We completed a 40-minute boot camp cardio workout, and it was awesome! Not too tough, not too easy. It had us running at speeds of 6.0, 8.0, 9.0, and 10.0, and we were walking in between - perfect for a day when I wasn't too motivated for a workout.

After the treadmill, I got straight to work on a new pizza recipe. I was going to make a cream sauce for a veggie pasta, but I felt like I've been slacking in the recipe department lately, so here you go!

White Sausage Pizza

White Sausage Pizza
Serves 4


  • 6 ounces (two links) hot Italian sausage, cooked and crumbled 
  • 1 recipe for whole wheat pizza dough (here's the one I used)
  • 1 (6 ounce) bag of spinach, cooked down
  • 1 cup ricotta cheese
  • 1 teaspoon dried oregano
  • 2 ounces Parmesan cheese, grated
  • 4 ounces mozzarella cheese, sliced
  • Fresh basil, for topping
Make the pizza dough ahead of time (at least one hour) and let rise in the fridge. Preheat the oven to 500 degrees. Roll the dough onto a pizza stone. Mix the ricotta and oregano in a small bowl, and spread the mixture evenly onto the dough. place the spinach evenly over the ricotta mixture, then top with the Parmesan and mozzarella. Top with the sausage.

Bake the pizza for 12 minutes, or until the dough is cooked through and the cheese is a little bubbly. Top with the chopped basil, and enjoy!

We enjoyed our pizza with asparagus and I spent the rest of the night stretching, watching Biggest Loser (dramaaaaaa!), and eating a bit of ice cream.

  2. The pizza definitely looks better than the oats! However, my main issue is the lack of a photo of Scout dreaming of his meals out on the patio ;-)
