Caprese Chicken and WIAW

Continuing my parents' visit in LA, today they came to stay with me for one night before we head up to Northern California for a weekend of water skiing. They even did the grocery shopping for our special dinner tonight: Caprese Chicken. More on that a little later. First let's go through the magical journey of what I ate today.



7:30 am - Breakfast
Yogurt, peanut butter, honey, and banana on the go, plus tea at home

12:15 pm - Lunch
Leftover veggie pasta from Sunday night

3:30 pm - Snack
Pear

4:30 pm - Snack
A handful or two of Love Grown Granola

6:45 pm - Appetizer
A few crackers, a few pieces of salami, a few pieces of cheese

7:30 pm - Dinner
Caprese Chicken with steamed vegetables and sourdough bread with two glasses of wine



9:00 pm - Dessert
Two chocolate chip cookies and a glass of milk

Caprese Chicken
Serves 4



  • 2 boneless, skinless chicken breasts (preferably organic)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon oregano
  • 2 large tomatoes (or 4 Roma tomatoes), sliced
  • 2-3 ounces mozzarella cheese, sliced
  • 2-3 tablespoons freshly chopped basil
  • Cooking spray
Preheat oven to 350 degrees. Heat the olive oil in a grill pan over medium-high heat. Season the chicken with salt, pepper, and oregano. Brown the seasoned chicken in the grill pan. Spray a medium baking dish with cooking spray and place the browned chicken in the bottom. Then layer the sliced tomatoes and top with the basil and mozzarella. Bake 10-15 minutes, or until the chicken is cooked through.

This meal was delicious! I always get nervous cooking for my parents, but they loved it. It was light, healthy, and moist. Perfect for summer, too! We were brainstorming other ways to make it, perhaps on the grill...

Could have used a few more vegetables in there, but it was a good day. I also skipped the workout (hopefully I can squeeze in some yoga in the morning) in favor of spending a little extra time with my parents. We're currently watching Betty White's Off Their Rockers, which is pretty hilarious. I'm also super stoked for Modern Family's season finale tonight. Any other fans?
