Starts and Stops

Today seems full of starts and stops. I set my alarm in hopes of working out before church but ended up sleeping later and playing with the kitten before finally forcing myself to get up. After church, I tried to go to the farmers' market to restock our bread supply (my favorite bakery, Great Harvest, has a stand at our local farmers' market). But after parking and walking halfway to the market, I realized I had no cash. And finally, this afternoon, I tried to make good on my goal to do some yoga and running but completely failed.

Actually, the workout part was pretty hilarious. Since I felt sore and not really in the mood to workout, I scrolled through the yoga selections in the Exercise TV section of OnDemand and chose what I thought would be a soothing, stretch-focused, slow workout. It had the words "twist" and "detox" in the title; how intense could it be? Well, as it turned out, very intense. Okay, it wasn't horrible, but it was not what I signed up for. Look what they wanted me to do!

After 17 minutes, I quit and watched the rest (and, obviously, took pictures of my television) while I stretched. Then I reluctantly moseyed over to our gym to run one whole mile and called it a day. But later, as I mentally beat myself up for wimping out and not completing the workout I had planned, I acknowledged that I should feel good about at least doing something. No, it wasn't my best day, but I still worked up a little sweat and shouldn't give myself too hard of a time for it. I think we should feel good about any exercise, even if we can only manage ten minutes or even if it's a walk that doesn't get your heart rate up. I can tell you that if I hadn't worked out at all I would have felt much worse (and guiltier) than I do now. As it is, I'm just looking forward to another try tomorrow; hopefully I can actually complete a yoga video or run more than one mile. 

Meanwhile, if you made it to the gym or managed a workout this weekend, congrats! You should feel good for any exercise and focus on increasing time or intensity as your body allows.

Take-It-Easy Saturday

Oh, sweet, sweet Saturday. What wonders you bring! (Was that too dramatic? I'll tone it down.)

Today was a pretty good day, though. I woke up early to run a few miles and knock out some lunges before a breakfast of overnight oats. You might remember my first attempt at overnight oats, which resulted in a texture that Terry and I couldn't quite appreciate. Today's batch was much better. I combined the following last night:
  • 1/2 cup oats
  • 1 heaping tablespoon crunchy peanut butter
  • 6 ounces Greek yogurt
  • 3 tablespoons milk
  • 1 teaspoon cinnamon
  • 2 teaspoons honey
The consistency was much better than last time, and I loved the ratio of oats to dairy. That peanut butter crunch made it delicious! After breakfast and a shower, I met up with Terry's parents, grandparents, aunt, uncle, and brother (Terry had work) for lunch at The Hat, a chain pastrami place. I am convinced that The Hat has the best pastrami this side of the Mississippi (<--did you learn a little song to help you remember how to spell Mississippi when you were little? I still sing it when I write it), and their chili cheese fries are incredible. I haven't been there in over a year because it's a very special splurge! We enjoyed a good lunch and some good conversation before I headed back to our part of town for grocery shopping and a solid hour of reading my current book, Catching Fire, the second book in the Hunger Games series.

Tonight I made two different types of muffins: banana-walnut and lemon-blueberry. For the banana-walnut, I simply followed the exact recipe from Lisa's blog but with muffins.

Banana-Walnut Muffins
For the lemon-blueberry, I got the recipe base from Lisa again, but I made some changes.

Lemon-Blueberry Muffins
Yield: 12

Berries that burst make for beautiful pictures!

  • 1 1/2 cups whole-wheat flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2 eggs
  • 2 tablespoons honey
  • 1/4 cup oil
  • 1 teaspoon almond extract
  • 3/4 cup fresh squeezed lemon juice
  • 2 teaspoons lemon zest
  • 1 cup fresh or frozen blueberries
Mix the flour, cinnamon, salt, and baking powder in a large bowl. Make a well in the center and add the eggs, honey, oil, extract, lemon juice, and zest. Stir well but don't overmix. Stir in the blueberries. Spoon the batter into a greased muffin pan (I use an ice cream scoop to keep them even - a little trick from the Barefoot Contessa). Bake the muffins at 400 degrees for 12-14 minutes.

These muffins would be much more fitting in the summer, but I've been wanting to try them for awhile now and finally had the lemons and blueberries. The lemon tasted too sour in the batter, but the baking toned down all the flavors. I think the lemon-blueberry combo is a winner! I'm looking forward to trying other variations, like almond-poppyseed!

Yesterday I vowed to squeeze more vegetables into my meals, and I made good on that promise today! Here's what I call a spinach-eggplant bake.

Spinach-Eggplant Bake
Serves 6
  • 1 bag fresh spinach
  • 1 1/2 cups organic pasta sauce
  • 1 eggplant
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Mozzarella for topping
Heat the oven to 400 degrees. Dice the eggplant into one-inch cubes. On a cookie sheet, toss the eggplant, olive oil, salt, and pepper together. Bake for 20 minutes, turning once. Meanwhile, cook down the spinach in a medium saucepan over medium-low heat. Once cooked down, add the pasta sauce and heat to an easy boil. 

Once the eggplant is done, spray a small casserole dish with cooking spray and spread the eggplant cubes along the bottom. Then spoon the spinach-pasta sauce mixture over the top, covering the eggplant entirely. Add the mozzarella slices on top and bake the dish for 15-20 minutes, or until the cheese is melted to your heart's content.

This dish tasted delicious. It's similar to the roasted eggplant with tomato sauce recipe, but the spinach adds some nutritional value and tastes great. Next time I might add some cooked pasta to the dish before baking, but tonight I wanted a lighter meal. While I ate, I checked out the new(ish) series Happy Endings on ABC, which seems hilarious and makes me regret not watching sooner! Anyone else a fan?

Some Workouts and a Special Announcement

Remember me? This week drained every bit of energy out of me before I made it home each day, so blog posts would have been halfhearted at best. But I survived Friday, and you can expect plenty of blog updates this weekend. First, I'll catch you up on the two (count 'em, two) workouts I squeezed in over the last five days.

Thursday's Workout
I felt so exhausted on Thursday that the idea of cardio actually made me dizzy, so I stuck to a short arms-only workout to at least say I did something.


Upper Body Series 2

  • 10 tricep push ups (keep your elbows super close to your ribs and your wrists under your shoulders)
  • 50 crunches (I alternated between regular, straight-leg, and bicycle)
  • 10 wide-arm push ups
  • 2 minutes nonstop bicep curls
  • 1 minute Superman swimming (lay on your belly and lift your shoulders/upper chest off the ground; stretch your straight arms out above your head and lower to your hips, then back above your head)
I repeated the whole series three times and felt decently fatigued, but I'm interested in trying this workout again when I'm not as exhausted. I wonder if it would feel too easy, but you could always amp up the repetitions or times.

Today's Workout
I felt desperate for cardio after four days of nothing, so after cleaning house this afternoon I headed to our cozy gym for a workout. (Sometimes, if two or three people are working out in the room and the door is closed, the two walls of windows completely fog up. Disgusting. I absolutely MUST have the door open; how can you work out when you can't breathe?) I combined a past incline walking workout with a touch of running and then hopped on the elliptical for 20 minutes, levels 13 and 9, two miles total.

After all that, I got to enjoy some leftovers from dinner earlier this week. Jenn and I tested an Italian place in Westwood, Pomodoro, which had great service and delicious pasta. I wasn't crazy about their bruschetta (Jenn figured out that it was under-seasoned), but I would certainly go back. $32 for two meals and an appetizer (plus leftovers for each of us) ain't bad!

Tonight's leftover pasta was just as yummy alongside some cheesy garlic bread. I've really taken comfort food to a whole new level this week, and I have some ambitious plans to amp up my vegetable intake as soon as possible.

Unhealthy Habits

Remember when I said December would be a better month? So far, it is absolutely kicking my ass. The rabbit, rabbit gods are mocking me. Luckily, I'm still finding ways to laugh and even got to spend time with my family over the weekend, but otherwise, I'm seriously struggling to get through just the sixth day of the month. Ouch.

Unfortunately, I can count on one hand (two fingers, if you want to get specific) the number of days I've worked out so far. I know I've mentioned before that working out cannot always be the thing that gets pushed aside when life gets busy, but this week has given me a run for my money (minus the running). Tonight, as I watched my cheerleaders at our high school's basketball game, I got to thinking about how easy it is for unhealthy habits to sneak up on me when I get busy. This week has been a perfect example of my worst habits rearing their ugly heads when I don't find the time or energy to resist or follow through.

I think listing out what I believe to be my unhealthiest shortcomings can help me feel more accountable for improving upon them. Even though they're tough to fix, I imagine it's best to at least be honest with ourselves about where we can make positive changes. Little by little, we can get better and live a better life (<--title reference!).

My Unhealthiest Habits

  • Going back for seconds...and thirds... If I like something, I usually eat as much of it as my little heart desires. While I believe this practice is absolutely acceptable for healthy foods, like a homemade dinner or fruit, it doesn't work as well for things like chocolate cake, hot dogs, and French fries.
  • Soda. I grew up drinking Diet Coke. I still love it. I know, I've read all those articles, too. It's horrible for you. Even the diet stuff. Especially the diet stuff. Especially for me: My stomach acts up due to the caffeine (and, likely, all the processed ingredients). But still, I just couldn't resist tonight when I literally started nodding off at my desk while entering grades at 4:00 in the afternoon. I finally submitted to the soda, and alas, my stomach hurt, my head felt fuzzy, my heart rate shot up. It didn't taste all that great. I felt worse, but hey, I was awake!
  • Lack of stretching. This one is ironic, because I used to be a dancer and extremely flexible. I stretched for at least an hour daily throughout high school and my first few years of college. But now that I'm not expected to kick my leg to my ear, I don't focus on stretching like I know I should. My body feels tighter and more sore, and the only time I really get a good stretch in is during yoga, which I only do about once a week. 
  • Eating out. Say what?! Yeah. Remember that thing this whole blog started with? Not eating out for a month? How great we did and how fun it was and how much money we saved and how delicious our homemade meals were? Ah, yes. And then suddenly the 30-Day Let's Eat In Challenge ended, leaving me to my own devices. That spells trouble. So tonight, instead of packing a peanut butter and honey sandwich, I scooted out to a delightful Italian deli near my school for the world's greatest sandwich. 
And I felt guiltier with every bite.
  • Lack of time with people (and pets!) who matter most. I often push aside time with my husband or kitten or family or friends because I'm just so busy. But this year, it's felt as though I'm always just so busy. Again, I have to find ways to balance the things that I decide to sacrifice. I list this unhealthy habit because time with friends and family (and pets!) reduces stress and increases positive feelings, at least for me. 
  • Splurging on processed foods. When I have plenty of time to grocery shop and prepare snacks, I am very good about sticking to only the foods I bring from home. I am able to say no to the doughnut in the teacher workroom, and I manage to resist the fun-size Snickers sitting on the table during an afternoon meeting. But if I don't pack quite enough food or if I am feeling tired and apathetic, I give in - big time. I really go for it. Yesterday, I ate not one but two packs of Famous Amos cookies. Why? Yes, I love me a good cookie, but they aren't that great. I could have waited until I got home to enjoy one of the cookies my mom made and sent home with me. They would have been far less processed and much more satisfying, so I would have eaten less overall. 
I struggle with several more unhealthy habits, but I think this list provides me with a good starting point for some improvements. I know today wasn't my last soda; I already know I won't have time to work out tomorrow; I am planning to eat the other half of my Italian sub for lunch tomorrow; I will be home too late tomorrow night for my usual Scout-and-Terry cuddle time; I know for sure that I will eat Famous Amos again. But I can certainly challenge myself to try to get better at being aware of and working on improving these shortcomings. Sounds like the beginnings of a New Year's resolution to me!

A Weekend Recap in Pictures

I promise I haven't run away. I have desperately missed my blog; even two days away was too much! I wasn't able to write because I flew up north on Saturday to enjoy some much-needed time with my family. Here's a little recap in images from the quick trip:

Magical Santa Anas

In the movie The Holiday (which, incidentally, is one of my favorite Christmas movies), Kate Winslet's character, on vacation in LA, mentions the Santa Ana winds about 17 times. She and Jack Black's character talk about the Santa Anas as though they hold some kind of magic. At one point, someone says, "Anything can happen!" in reference to the winds. 

Well, I've lived in LA for eight years now, and I can tell you that I've never heard of any Santa Ana lore or legend that suggests magic comes about when the winds blow. I can tell you that the destruction caused by this alleged "magic" has created quite a stir on our local news stations, and it shut down the school where I teach for the second day in a row. (You can hear about my adventure during the first day shut down here. Highlights include two hours of traffic and a car accident.)

So I had the day off today! I think long weekends are among my top 10 favorite things. Also included: Christmas music, which I got a great dose of this morning as I drove down to Anaheim to meet my parents. As I mentioned on Wednesday, my parents are in Southern California to go to Disneyland! (How adorable is that?) Unfortunately, my dad's camera broke, and he really wanted to take pictures of all the Disney decorations. So I headed out this morning to drop off our camera to them, thinking that the magical Santa Anas must have blown all the cars off the road, because there was zero traffic! (Don't worry, I hit plenty when I got back up to West LA, so the world was right again.)

Handing over the camera to my parents reminded me of another similar exchange in 2003. My parents had just dropped me off at college, one of the top 10 saddest days of my life, and then my dad called to say he had forgotten his camera in my dorm room. Ugh. I had to say goodbye again? Thankfully I had two wonderful roommates who came with me to tearfully hand over the camera and cheer me up afterward. And luckily, today's exchange wasn't nearly as depressing! I get to see my parents tomorrow when I head up north for a little family bonding.

Before my Anaheim adventure, I enjoyed a great workout in our complex's tiny gym. I wasn't really in the mood for anything intense, but I skipped my workout yesterday and felt like I needed a good cardio session.

It wasn't crazy, but it got the job done. Inclines 10 and 12 definitely got me super sweaty and really raised my heart rate. This workout is a great one to try if you are feeling like you need a low-impact workout or just feel like mixing things up. (Also, if you have a personal treadmill at home and watch TV while you work out, you could watch almost exactly one episode of your favorite sitcom during this workout!)

Rabbit, Rabbit, Ratatouille

Rabbit, rabbit! Do you say that for good luck at the beginning of every month? My dad still texts me to remind me to say it, and my whole family proudly declares that they remembered or pitifully admits they forgot. Today, Terry and I remembered; good thing, because we need a good month. November was rough.

But alas, if the first day serves as any indication, December might be a rough one, too. Terry is still swamped at work, getting home after seven almost every night and struggling through a minimum of 12 hours per day. On my end, today school was canceled because of our crazy winds in Southern California. If you live here, you're certainly aware, but I hear that we made some national news, too. Getting ready for work, we always watch KTLA for our news fix and to make sure the roads are clear (an absolute must in LA; you never know when your 10-minute commute can become two hours). Today they announced that a few schools in the San Gabriel Valley, where I work, were shut down. I actually laughed. "They're shutting down schools due to wind?" I thought. Ridiculous!

Well, ridiculous or not, it happened at my school too. Still, teachers are expected to show up, help send kids home, and stay until excused. After an hour of standing on street corners, waving signs that were utterly useless given the gusts of wind, and an hour of trying to find work that doesn't require a computer, we got the okay to leave around 10 am. Normally, I'd be thrilled to have an unexpected day off to run errands or blog, but today it took me two hours to navigate the roads lined with fallen trees. Plus, a girl rear-ended me at the only functioning stoplight in the valley (thankfully, no one was injured, including our cars, but I did have to give her a hug because she felt so bad). But after all that, I couldn't help but think that maybe this month won't be so bad after all. We got a call that our classes are canceled for tomorrow, too, and this time I get to skip the six-hour trip out to school and back. An extra, unexpected eight hours without having to call in sick? I can't exactly complain!

Warning: Inappropriate language and mental images you may not be able to get out of your head! Also, if you're reading at work, you WILL laugh out loud, so make sure you have a good lie for your boss as to why you're cracking up!

So tonight I worked on a Christmas gift project and then created a fun new recipe. We happened to have all the ingredients for ratatouille already, but I wanted to make the dish into an entree. Pasta it is! December doesn't look so bad after all.

Ratatouille Pasta
Serves 4-6
Ratatouille Pasta


  • 2 tablespoons olive oil, divided
  • 1 onion, finely chopped
  • 1 yellow bell pepper
  • 1 garlic clove, minced
  • 1 eggplant
  • 3 zucchini squash
  • 1 28-ounce can plum tomatoes
  • 1 pound of whole-wheat pasta
  • 6 ounces fresh mozzarella, cubed
  • Salt and pepper, to taste
  • Parmesan cheese (optional, for topping)
Set a large pot of water to boil. Add the pasta and cook according to the package directions. Heat the oven to 400 degrees. 

Meanwhile, in a large pan, heat one tablespoon of the olive oil over medium heat. Add the onion and cook until tender, about 10 minutes. Add the bell pepper and cook about 4-5 minutes. Dice the eggplant (you can also peel it, if you prefer) and zucchini into 1/2-inch cubes. Toss the other tablespoon of olive oil, eggplant, zucchini, and a dash of salt an pepper on a cookie sheet. Cook the zucchini and eggplant mixture for 10 minutes, tossing once. Set aside, and reduce the oven temperature to 350 degrees.

While the vegetables are roasting, open the can of plum tomatoes, and either hand-chop or food processor-chop the tomatoes. Pour the tomatoes and their juices in the pan with the cooked onion and pepper. Add the garlic. Bring the tomato mixture to a boil, then reduce to a simmer for 10 minutes.

Combine the cooked pasta, tomato mixture, roasted vegetables, and mozzarella in a large baking dish. Bake the whole dish at 350 degrees for 20 minutes. Serve hot and top with Parmesan cheese, if desired. 

Excellent way to combat the chill from wind!

We really loved this pasta! The eggplant gave a sweet, tangy flavor, and the whole dish really did taste like ratatouille. The mozzarella was the perfect touch to make this pasta feel like a deliciously healthy comfort food. I hope you'll try it!
