Heeeyyyyy, Happy Fri-day!

So have you seen Gangnam Style yet? If you haven't, you won't understand the title of this post (did you sing it the right way?) and you're out of the loop, because this bad boy has gotten 122 million views on YouTube. Go watch, then come back. You can thank me later.

Happy Friday! I'm still getting back into the groove of things over here. I haven't quite picked up my normal routine for the school year yet, and I'm way more tired than usual. But I did manage to get in my first 30-minute post-half marathon workout (granted, I was a sweaty, pathetic mess at the end and didn't even get to the cardio part, but still). The hardest part of the workout for me was the push up to unstable plank, as illustrated here by Jillian Michaels, one of my idols.

Talk about a compound move! I'll be adding this one to my own workouts after boot camp.

I'm so excited to hit up a nice, long incline walking workout tomorrow with some core work on the side. I'm a little off in my boot camp workouts because I really needed a few days of rest after Sunday, but I plan to just extend my boot camp time to finish out the last two weeks. Now that the half is done, I'm just thrilled to be able to mix up my cardio options, squeeze in more yoga, and add HIIT routines again. Hallelujah!

Oh, yeah. I'm ready.

This time last week I shared my plan of attack for food this week, since I felt unorganized and unhealthy in the kitchen. Turns out the plan worked out a little too well; we have more leftovers than we know what to do with!

On Monday, I made Spaghetti Pie, which came from Courtney's recipe. I just made a pot of spaghetti, sauteed up mushrooms, spinach, garlic, onion, and grated zucchini, and added marinara sauce. In a pie plate, I layered the pasta (with a little marinara to prevent dry noodles), then mozzarella, then the vegetables and marinara, then a bit more pasta and Parmesan cheese. I baked it all at 350 for about 20 minutes and then cut "pie" pieces. It was tasty, but honestly it just tasted like spaghetti. I think Courtney's recipe turned out a bit more creatively. Either way, it tasted good enough to eat it every day for lunch this week!

On Wednesday, Terry cooked up a fantastic batch of his famous chili. He included zucchini and squash to pump up the nutrition, and we baked up some potato wedges to make chili cheese fries!



We've certainly enjoyed indulging in some comfort foods around here, even though they're loaded with vegetables, and the combination of such hearty food and not working out has made me feel a bit bleh. Some weeks are like that, and I'm grateful I have more patience with myself now. No big deal, I know I can pick back up where I left off tomorrow.

This weekend will be packed with some fun activities. Tomorrow we're celebrating our friend Katie's birthday and going to the first UCLA home game of the season; Sunday we have a picnic in the park with some UCLA alums. And in between all those fun outings I have a ginormous stack of papers, tests, and journal entries to grade. I'm also hoping to sneak over to the farmers' market to grab some bread (odd, but I buy my bread at the farmers' market) because I've been craving PB&J.

Scout's plans involve attacking, jumping into, and hiding in this box. 

So what are the weekend plans? Anybody rooting on a football team, running a race, going on a trip, taking some much needed R & R?

  1. Moving back home and not having access to a gym yet has definitely made me feel a bit blah - I get it! But sometimes we just have to remind ourselves we need rest and in a few days we'll feel good-as-new! :)

  2. i love jillian michaels and all of her bombass compound moves. i am thinking i am going to do ripped in 30 after i recover from my race. also those chili cheese fries look to DIE for. i am going to add those to my meal-planning next week for sure.
