The Evolution of an Illness

Are you enjoying the saga of my illness as it unravels? Today I did manage to work out (see below), but by late afternoon my throat was absolutely killing me. If you've been following along, we've evolved from food poisoning on Saturday to body aches Sunday to a crazy sore throat/cough/chest congestion today. Any doctors out there want to diagnose me?

So I went to CVS, where I eavesdropped on an angry customer yelling at a pharmacist, had to show ID for cough syrup, and spent $30 on cold medicine.

Last night, I was too busy posting about my 2012 goals to mention a delicious little lunch I assembled. It was simple and delicious; perfect for a productive day.

Veggie Wrap

  • 1/2 green bell pepper, sliced
  • 1/4 red bell pepper, sliced
  • 1/4 cup spinach leaves
  • A sprinkle of chopped red onion
  • 1-2 ounces cream cheese
  • 1 whole-wheat tortilla

Spread the cream cheese on the tortilla (I toasted my tortilla to boost the flavor), then top the cheese with all the veggies. Roll it all up and enjoy!

Super simple and a perfect way to squeeze in extra vegetables. I love the crunch of the peppers with the creamy cheese, and the flavors all come together deliciously.

Let's move back to today, before the crazy sore throat ruined everything. I hopped back on the wagon for my first workout of the year! Ouch, six days in... But we can't push it when we're sick, right? So, since I was feeling well this morning, I completed the following workout:

Then, for a quick quads workout:

It was short, but I'll be sore tomorrow!

Afterward, I tried a new breakfast that I've seen on several other healthy living blogs: An egg, cheese, and jelly English muffin sandwich! Weird, right? Now, on other blogs I've seen the eggs fried, but I tried scrambled because my tummy wasn't quite ready for runny eggs yet.

It's sort of a strange combination on paper, but I actually think it works! I am looking forward to trying the runny eggs with it next time.

Off to bed to try to sleep off this horrible sore throat. Good night!
